Together with his brothers, he leads Assaggeria KM431, a temple dedicated to sheep meat, a symbol of his homeland and of the rural world that this festival also honors. His cuisine is a tribute to the territory, to the ancestral knowledge passed down from generation to generation, and to old recipes transformed by fire.
